Springoween Picnic: Witch’s Garden Chicken Salad

This content originally appeared in the 2025 spring issue of Spooky Little Halloween—The Magazine.

Who says cranberries are only for fall feasts and holiday tables? Not us, witches.

These little ruby-red orbs of tart goodness are sneaking their way into a springoween picnic that's devilishly delicious and dead easy to make. This is the first in a five-part series where I’m giving your spring spread a ghoulish glow-up — starting with the star of any picnic basket: a killer chicken salad.

Meet the Witch's Garden Chicken Salad — a classic, creamy chicken salad bewitched with dried cranberries and pepita seeds for a little tart, a little crunch, and a whole lot of magic. It's the kind of thing that disappears from the table faster than you can say "double, double, toil and trouble."

Who says cranberry is only for fall? Add it to your chicken salad this spring for a delicious and tart spin on a classic.

Ingredients

Ingredients
  • 2 cups cooked chicken
  • ½ cup mayonnaise
  • ⅓ cup dried cranberries
  • ⅓ cup pepita seeds
  • Salt and pepper to taste

Instructions
  1. Start with the chicken. Any kind of cooked chicken works beautifully here — a store-bought rotisserie chicken is my go-to for easy picnic prep, and canned chicken works in a pinch. If you're making it from scratch, add 2 large whole chicken breasts to a pot, season with salt and pepper (or any herbs and spices you love), cover with water, and boil over medium-high heat for 15–18 minutes. Shred in a food processor or by hand using two forks.
  2. Build the salad. Add mayonnaise to the chicken and mix well until fully coated. Fold in the dried cranberries and pepita seeds. Season with salt and pepper to taste — and then taste again, because this is where the magic happens.
  3. Serve it right. Scoop onto your favorite bread. Croissants are a classic choice, but I love wandering the bakery section of the grocery store to find something special — a dark rye, a seedy sourdough, a soft brioche. For the full springoween experience, lightly toast the bread, add lettuce and/or tomato if you like, and wrap each sandwich in parchment paper for easy picnic transport.

Notes

Make it your own:

  • Add some heat: A pinch of cayenne or a few dashes of hot sauce gives it a little wicked kick.
  • Go green: Diced celery or green apple adds crunch and freshness.
  • Creamier cauldron: Mix in a spoonful of Dijon mustard with the mayo for a tangier base.

Here's my hot take: chicken salad is one of the most personal recipes you'll ever make. The measurements below are a starting point — a spell, if you will — but the real magic is in making it yours.

More cranberries? Go for it. Extra mayo? No judgment here. Measure with your heart!

The only thing I'll insist on is this: don't sleep on the pepita seeds. Also called pumpkin seeds, they add this subtle nuttiness and satisfying crunch that makes every bite feel just a little witchy. Paired with the chewy-tart dried cranberries, they turn an ordinary chicken salad into something you'll be thinking about long after the picnic blanket is packed up.
